Giants' lifespans in One Piece may be explained by its world's geography
One Piece is currently undergoing the Elbaph arc in the manga and this storyline has already shed some light on the Giants' ways and their history. While this arc is yet to fully blossom and provide the kind of information and lore fans are using from author Eiichiro Oda, a user on X named @3SkullJoe has come up with a theory explaining the Giants' massive lifespan.
It was already stated in the Little Garden arc back in the Grand Line days of One Piece that the Giants' lifespan is three times longer than that of the average human. However, while it could be argued that is mostly down to their unique biology, this theory explains that it could be due to the weather and climate conditions of Elbaph.

Explaining how the climate conditions in Elbaph could lead to the Giants' longer lifespans in One Piece
There was a popular theory in recent weeks that time passes differently in Elbaph, but this user on X rejects that notion by stating how that didn't affect Big Mom and Mother Caramel. Instead, this theory implies that the land of the Giants, and the entirety of the planet in this series, is actually rotated off of its proper orbital axis, thus effectively flipping the magnetic fields of the planet.
Pole shifts can occur due to significant changes in climate, water levels, and land mass. For example, the creation of the Red Line in One Piece could contribute to this shift, especially with Elbaph's position near the North and West Blue.
This change might alter weather patterns, with some areas in darkness and others in constant sunlight, impacting people's health and biology, like the Giants. The shift could also lead to increased oxygen levels, which might explain the Giants' size and the large animals in Elbaph.
More details surrounding this theory
Another element that solidifies this theory is that Dr. Vegapunk already confirmed in the previous One Piece arc that the world was sinking throughout the years, which is a notorious example of climate change. Therefore, by taking into account real-life information about how human evolution was also conditioned by the weather, it wouldn't be out of the question that author Eiichiro Oda chose to take this direction.
This theory could not only explain the size of the Giants but could also have more ramifications for other characters. Dr. Kureha constantly mentioned in the Drum Island arc how she was over one hundred years old and is still quite lively, so this could mean that she has been exposed to a similar context that has allowed her to live for so long.
Final thoughts
The Elbaph arc has paved the way for a lot of interesting revelations and the idea of the weather changing and having consequences on the biology of several races in One Piece is certainly a powerful one. It could also connect with Vegapunk's revelation in Egghead, thus having more ramifications in the grand scheme of things.
