The Arizona Cardinals drafted him with the 115th overall pick in the fourth round at the 2025 NFL draft. A native of Jersey City, New Jersey, Simon attended St. Peter's Preparatory School. As a junior in 2018, he recorded 89 tackles, 13.5 for loss, 4.5 sacks, an interception, a forced fumble, and two fumble recoveries. He was ranked the No. 3 player in New Jersey and the No. 9 outside linebacker nationally. Over his college career, Simon appeared in 57 games for Ohio State. The following year, he had 32 tackles, 6 for loss, two sacks, a pass deflection, and a forced fumble.

In 2024, he was named a team captain, earned first-team All-Big Ten Conference honors, and received the Bill Willis Block "O" jersey for leadership. He led the team with 112 tackles and was named defensive player of the game in the Rose Bowl win over Oregon. He repeated the same feat during the CFP National Championship win over Notre Dame. Simon recorded 38 tackles across four CFP games, including 12 vs. Tennessee, 11 vs. Oregon, seven vs. Texas, and eight vs. Notre Dame.
